Delicious, Sustaining Protien Pancakes


Delicious AND Nutritious! (Sorry... I couldn't resist...)


Right, now that my interwebs are up and running... I hope to be back with a vengence! This is a recipe I've wanted to put up for y'all for a while now, and it's the second to last one from last year's flat ever to be posted!

Protien-Packed Pancakes. These are pretty neat because they're filling, sustaining, essentially sugar-free (before tinned peaches and maple syrup, at least...) and PANCAKES! My second favourite food after spinach and before ice-cream...

It is, I believe, the addition of protien-rich cottage cheese which makes this delicious breakfast so sustaining. The oats add fibre, and the addition of fruit sweetness and flavour. One batch will feed my boyfriend and me for 2-3 breakfasts depending on how hungry we are!

With the traditional maple syrup and tinned peach combo...

Ingredients:
1 cup, rolled oats.
1 cup wholemeal flour.
1/2 tsp baking powder.
1 tsp nutmeg.

2 eggs.
100g cottage cheese.
1 cup milk.
1 grated apple OR 1 mashed, ripe banana OR 1/2 cup berries.

Method:

In a bowl combine dry ingredients, and in a jug combine wet ingredients. Pour the wet into the dry and  fold through. Allow the bather to rest for at least half an hour, but preferably over night - this helps to break down the starches in the flour and results in softer, easier to digest pancakes...

Heat a large pan an grease with your perfered method... Cook large spoonfulls of batter (approx. pikelete sized) for 2-3 minutes on each side, or until cooked through.

Serve warm with your favourite trimmings.
